Instructions

  1. 1In a mixing bowl, combine the shredded buko (young coconut) meat, unsweetened coconut cream, stevia or equal Gold, pandan extract, and green food coloring (if using). Mix well until the ingredients are evenly distributed.
  2. 2If desired, you can add sugar-free nata de coco (coconut jelly) and sugar-free coconut gelatin to the mixture for added texture. Gently fold them into the mixture.
  3. 3Once everything is well combined, cover the bowl with plastic wrap and refrigerate for at least 1-2 hours to allow the flavors to meld and the salad to chill.
