Ingredients
Coconut Flour1 cup
Almound Flour1/2 cup
Low Carb Sweetener (Equal Gold)1/4 cup
Baking Powder1/4 teaspoon
Coconut Milk1/4 cup
Large Eggs2
Vanilla Extract1 teaspoon
Coconut OilFor Frying
Salt1/4 teaspoon
Instructions
- 1In a mixing bowl, combine the coconut flour, almond flour, erythritol, baking powder, and salt. Mix well.
- 2Add the coconut milk, eggs, and vanilla extract to the dry ingredients. Stir until a thick batter is formed. If the batter is too dry, you can add a little more coconut milk.
- 3Heat cooking oil in a deep pan or pot over medium heat. Make sure there is enough oil to submerge the Carioca balls.
- 4Scoop about a tablespoon of the batter and shape it into a ball using your hands. Repeat with the remaining batter.
