Ingredients

Instructions
- 1In a mixing bowl, beat the eggs until well combined.
- 2Add the powdered erythritol and vanilla extract to the beaten eggs. Mix well until the sweetener is fully dissolved.
- 3Gradually add the coconut milk and water to the egg mixture, stirring continuously.
- 4Pass the mixture through a fine sieve or strainer to ensure a smooth and creamy texture.
- 5Preheat your oven to 325°F (163°C).
- 6In a flan mold or individual ramekins, evenly distribute the mixture.
- 7Cover the mold or ramekins with aluminum foil, ensuring they are tightly sealed.
- 8Place the covered mold or ramekins in a larger baking pan and create a water bath by adding hot water to the larger pan, filling it about halfway up the sides of the mold or ramekins.
- 9Carefully transfer the baking pan with the water bath and covered Leche Flan to the preheated oven.
- 10Bake for approximately 1 hour or until the Leche Flan is set. To check for doneness, insert a toothpick into the center of the flan. If it comes out clean, it's done.
- 11Once done, remove the Leche Flan from the oven and allow it to cool to room temperature.
- 12Once cooled, refrigerate the Leche Flan for at least 2 hours or overnight to fully set.
- 13To serve, run a knife along the edges of the mold or ramekins to loosen the Leche Flan. Invert onto a serving dish, allowing the caramel sauce to flow over the top.
