Ingredients

Instructions

  1. 1In a mixing bowl, beat the eggs until well combined.
  2. 2Add the powdered erythritol and vanilla extract to the beaten eggs. Mix well until the sweetener is fully dissolved.
  3. 3Gradually add the coconut milk and water to the egg mixture, stirring continuously.
  4. 4Pass the mixture through a fine sieve or strainer to ensure a smooth and creamy texture.
  5. 5Preheat your oven to 325°F (163°C).
  6. 6In a flan mold or individual ramekins, evenly distribute the mixture.
  7. 7Cover the mold or ramekins with aluminum foil, ensuring they are tightly sealed.
  8. 8Place the covered mold or ramekins in a larger baking pan and create a water bath by adding hot water to the larger pan, filling it about halfway up the sides of the mold or ramekins.
  9. 9Carefully transfer the baking pan with the water bath and covered Leche Flan to the preheated oven.
  10. 10Bake for approximately 1 hour or until the Leche Flan is set. To check for doneness, insert a toothpick into the center of the flan. If it comes out clean, it's done.
  11. 11Once done, remove the Leche Flan from the oven and allow it to cool to room temperature.
