Keto Palitaw
Keto Palitaw is a low-carb version of the traditional Filipino snack. These chewy rice cakes are coated with grated coconut and are a delicious treat while adhering to a ketogenic diet.

Ingredients
Coconut Flour1 cup
Almound Flou1/2 cup
Keto Sweetener (Equal Gold)1/4 cup
Salt1/4 teaspoon
Hot Water3/4 cup
Grated Coconut (unsweetened)1/4 cup
Sesame Seeds (optional toppings)1 to 2 tablespoon
Instructions
- 1In a mixing bowl, combine the coconut flour, almond flour, erythritol, and salt. Mix well.
- 2Gradually add the hot water to the dry ingredients, mixing as you pour, until a sticky dough forms. Allow the dough to rest for a few minutes
- 3Divide the dough into 12 equal portions and roll each portion into a ball
- 4Flatten each ball slightly to form a disc shape, about 1/4 inch thick
- 5In a pot, bring water to a boil. Gently drop the flattened dough discs into the boiling water, one or two at a time, and cook until they float to the surface. This should take about 1-2 minutes
- 6Use a slotted spoon to transfer the cooked Palitaw to a plate lined with paper towels to drain excess water
- 7Roll each Palitaw piece in grated coconut until fully coated. You can also sprinkle sesame seeds or powdered erythritol on top for added flavor and decoration
- 8Serve the Keto Palitaw immediately and enjoy as a delightful Filipino-inspired low-carb snack!
