Ingredients
Onion1/2 diced
Mushrooms1 and 1/2 diced
Coconut Oil / Olive Oil1/2 tsp
Coconut Milk1 and 1/2 cup
Cauliflower Florets2 cup
Onion Powder1 tsp
Salt1/4 tsp
Pepper1/4 tsp
Instructions
- 1Add cauliflower, coconut milk, onion powder, pepper, and salt in a saucepan
- 2Cover and bring to boil over medium heat
- 3Reduce heat to low and simmer for 8 minutes.
- 4Using blender puree the soup until smooth.
- 5Heat oil in a saucepan over high heat.
- 6Add onion and mushrooms and sauté for 8 minutes.
- 7Add cauliflower mixture to sautéed mushrooms. Bring to boil.
- 8Cover and simmer for 10 minutes
