Chicken (boneless, skinless, thinly sliced)2 breasts
Sesame Oil2 tablespoons
Garlic (minced)4 cloves
Fresh Ginger (grated)1 inch
Bell Peppers (sliced, any color)1 cup
Cabbage (sliced)1 cup
Mushrooms (sliced)1 cup
Soy Sauce (or tamari for gluten-free)2 tablespoons
Oyster Sauce1 tablespoon
Rice Vinegar1 tablespoon
Stevia or Equal Gold (or any preferred low-carb sweetener)1 teaspoon
Salt
Pepper
Green Onions (sliced, optional for topping)
Sesame Seeds (optional for topping)
Instructions
- 1Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of sesame oil to the skillet.
- 2Add the sliced chicken to the skillet and cook until it is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.
- 3In the same skillet, add the remaining tablespoon of sesame oil. Add the minced garlic and grated ginger, and sauté for about 1 minute until fragrant.
- 4Add the sliced bell peppers, cabbage, and mushrooms to the skillet. Stir-fry the vegetables for about 3-4 minutes until they are slightly softened but still crisp.
- 5In a small bowl, whisk together the soy sauce, oyster sauce, rice vinegar, erythritol (or sweetener of choice), salt, and pepper.
- 6Return the cooked chicken to the skillet and pour the sauce over the chicken and vegetables. Stir everything together and cook for an additional 2-3 minutes to allow the flavors to blend.
- 7Remove from heat and garnish with sliced green onions and sesame seeds, if desired.
- 8Serve the easy keto chicken chow mein hot as is or over cauliflower rice for a complete low-carb meal.
