Ingredients
Gelatin1 pack
Instant Coffee2 tablespoons
Stevia Blend (24g)1/4 cup
Boiling Water1 cup
Heavy Cream350 grams
Vanilla Extract1 teaspoon
Stevia Blend2 tablespoons
Chia Seeds1 tablespoon
Whip Cream (optional)
Instructions
- 1In a mixing bowl put 1 tbsp of gelatin, 1 tsbp warm water then mix and set aside.
- 2In another bowl put 2 tbsp instant coffee, 1/4 cup stevia blend and 1 cup of boiling water mix until well combined then set aside.
- 3Get the first bowl of gelatin put 2 tbsp of hot water then mix until it becomes clear.
- 4Pour the gelatin to the coffee mixture and mix.
- 5Refrigerate for at least 2hrs or if the gelatin is firm.
- 6In another container pour 350ml of heavy or all purpose cream, 1tsp vanilla extract, 2 tbsp stevia mix until well combined then add the coffee jelly and mix again.
- 7Once the jelly has set, remove it from the refrigerator and slice it into bite-sized cubes.
- 8Optional: Add 1 tbsp of chia seeds then mix, cover and refrigerate. Optional: Top with whip cream.
- 9Serve the Keto Coffee Jelly chilled and enjoy!
