Ingredients

  • Heavy CreamHeavy Cream2 cups
  • Unsweetened Cocoa PowderUnsweetened Cocoa Powder1/4 cup
  • Stevia or Equal GoldStevia or Equal Gold1/4 cup
  • Gelatin PowderGelatin Powder2 tsp
  •  Cold Water Cold Water1/4 cup
  • Vanilla ExtractVanilla Extract1 tsp

Instructions

  1. 1In a saucepan, combine the heavy cream, unsweetened cocoa powder, and powdered erythritol. Place the saucepan over medium heat and whisk until the mixture is well combined and slightly heated. Do not bring it to a boil.
  2. 2In a separate bowl, sprinkle the gelatin powder over the cold water and let it sit for a few minutes to bloom.
  3. 3Add the bloomed gelatin mixture to the saucepan and continue whisking until the gelatin is completely dissolved and the mixture is smooth. This should take about 2-3 minutes.
  4. 4Remove the saucepan from the heat and stir in the vanilla extract.
  5. 5Divide the mixture evenly among four dessert glasses or ramekins. Let them cool to room temperature.
