A delightful keto-friendly version of the classic Filipino snack, Lemon Squares. These tangy and refreshing treats feature a rich lemony flavor and a buttery crust, all while being low in carbs and sugar.

Ingredients
Almond Flour1 and 1/2 cups
Stevia or Equal Gold (or any preferred sweetener)3/4 cup
Salt1/4 teaspoon
Unsalted Butter (melted)1/4 cup
Fresh Lemon Juice3/4 cup cup
Lemon Zest1 tablespoon
Large Eggs4 pieces
Heavy Cream1/4 cup
Coconut Flour2 tablespoons
Instructions
- 1Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
- 2In a mixing bowl, combine the almond flour, sweetener, salt, and melted butter. Stir until the mixture resembles coarse crumbs.
- 3Transfer the crust mixture to the prepared baking dish and press it down firmly to create an even layer.
- 4Bake the crust in the preheated oven for approximately 12-15 minutes or until it turns golden brown. Remove from the oven and set aside to cool.
- 5In a separate bowl, whisk together the lemon juice, lemon zest, sweetener, eggs, heavy cream, and coconut flour until well combined and smooth.
- 6Pour the lemon filling mixture over the cooled crust and spread it evenly.
- 7Return the baking dish to the oven and bake for another 15-20 minutes, or until the lemon filling is set.
- 8Once baked, remove the lemon squares from the oven and let them cool completely in the baking dish.
- 9Once cooled, cut the lemon squares into individual servings. Optionally, dust the tops with powdered erythritol for a finishing touch.
