Keto Tikoy

A keto version of the traditional Filipino snack, Tikoy. This keto-friendly tikoy is made without glutinous rice, using low-carb ingredients to achieve a similar taste and texture.

Ingredients

  • Coconut FlourCoconut Flour2 tablespoons
  • Psyllium HuskPsyllium Husk2 and a half tablespoons
  • Coconut CreamCoconut Cream50 milliliters
  • WaterWater100 milliters
  • SweetenerSweetener1 tablespoon
  • Sesame SeedsSesame Seeds
  • Unsweetened Peanut ButterUnsweetened Peanut Butter1 tablespoon

Instructions

  1. 1Toast 2 tbsp of sesame seeds in a pan until it turns golden brown.
  2. 2In a bowl sift 2 tbsp coconut flour, add 2 1/2 tbsp psyllium husk, 1 tbsp sweetener, 50ml coconut cream, 100ml water then blend well.
  3. 3Transfer mixture into heat resistant container spread and steam for 30 minutes.
  4. 4Loosen and transfer it to parchment paper to flatten tikoy.
  5. 5Spread unsweetened peanut butter and roll.
  6. 6Cut into 4 pcs and garnish with roasted sesame seeds and sweetener.
  7. 7Serve the Keto Tikoy at room temperature or chilled.
