Keto Tikoy
A keto version of the traditional Filipino snack, Tikoy. This keto-friendly tikoy is made without glutinous rice, using low-carb ingredients to achieve a similar taste and texture.

Ingredients
Coconut Flour2 tablespoons
Psyllium Husk2 and a half tablespoons
Coconut Cream50 milliliters
Water100 milliters
Sweetener1 tablespoon
Sesame Seeds
Unsweetened Peanut Butter1 tablespoon
Instructions
- 1Toast 2 tbsp of sesame seeds in a pan until it turns golden brown.
- 2In a bowl sift 2 tbsp coconut flour, add 2 1/2 tbsp psyllium husk, 1 tbsp sweetener, 50ml coconut cream, 100ml water then blend well.
- 3Transfer mixture into heat resistant container spread and steam for 30 minutes.
- 4Loosen and transfer it to parchment paper to flatten tikoy.
- 5Spread unsweetened peanut butter and roll.
- 6Cut into 4 pcs and garnish with roasted sesame seeds and sweetener.
- 7Serve the Keto Tikoy at room temperature or chilled.
